Apple cinnamon streusel muffins


Today I finally got to bake again! We´ve been very busy studying a lot lately so I was really happy to make one of my favorite treats today… apple cinnamon muffins. Last year I surprised Noemi with these delicious muffins when I visited her at the hospital. She loved them so much, she almost ate all of them in only one day. They´re really fluffy inside because they consist of apple sauce, which I made myself. I always make apple sauce when it comes to using up all the apples, it´s a great way to use up apples you don´t feel like eating , because they´re not that crunchy anymore. Well anyways the apple sauce gives a nice apple flavor but most important makes them really moist. For all those streusel and crumble lovers out there… you must try these muffins! (:DSC_1107



  • 250g apple sauce
  • 50g butter
  • 85 g brown sugar
  • 1 large egg
  • 170g flour
  • 2 tbs. of baking  powder
  • 1 tsp cinnamon
  • a little bit of grated nutmeg


  • 50g flour
  • 50g sugar
  • 1 tsp. cinnamon
  • a little bit of grated nutmeg
  • 3 tbs. butter, melted

Pre-heat oven to 180°C. Line a muffin pan with paper cups and set aside.

First prepare streusel: Combine flour, sugar, cinnamon and nutmeg, and add melted butter. Stir using a fork to form crumbles. Set aside.

In another bowl whisk butter and sugar until creamy using an electric mixer. Add egg, sifted flour, cinnamon, baking powder and nutmeg and mix until well incorporated. Now mix in apple sauce. Fill muffin cups using a cookie scoop or a tablespoon.

Last but not least press streusel on top and bake in oven for about 20 minutes or until streusel turn golden brown.

Enjoy warm, they´re simply the best then….
