This weekend I finally got to make these yummy cookies with my best friend. We wanted to make them a couple of weeks ago but instead I used up the rest of our apples and made something else. These cookies consist of few ingredients, cinnamon and macadamia nuts and taste really crumbly. I always love baking cookies and storing them in glass jars afterwards, perfect for unexpected or spontaneous visitors and honestly who does´t love cookies? I´m already getting really excited about this year´s christmas cookie baking and can´t wait for the Vanillekipferl and Linzer smell all over the house… Well anyways the cinnamon in these cookies already give you a warming and a little christmas feeling.
Ingredients:
- 170g butter
- 200g all purpose flour
- 100g powdered sugar
- 1 tsp. cinnamon
- pulp from one vanilla bean
- 1 tsp. baking powder
- 100g macadamia nuts, chopped
- 1 egg
- a pinch of salt
Mix butter, powdered sugar, vanilla pulp and a pinch of salt until creamy. Add cinnamon, flour and baking powder and also mix in an egg until well incorporated. Now you can use a cookie scoop or a teaspoon to scoop little cookie balls. Lay on a parchment paper covered baking tray and bake in oven for about 10-15 minutes until golden brown.
Let cookies cool out and enjoy. I love them most with a cup of milk… (:
