Strawberry avocado quinoa salad

This week I made this wonderful summer salad with my best friend- a strawberry avocado quinoa salad. A salad just of my taste light and refreshing! The added cilantro, and lime juice combination make this salad taste a little bit asian, which I love about this recipe most! At the moment Noemi and I are studying a lot for exams and can´t post very often.

Not posting for a longer period of time stresses me out a little cause I love to blog and let you now what is going on in my kitchen. Anyways this time of not being able to post that much will be over soon and you can expect lots of fruity recipes, salads and of course delicious baked goods! Can´t wait!

This is what you will need:

  • 2 avocados, diced
  • 1 cup of quinoa
  • a handful strawberries
  • juice of 1 lime
  • 1 small onion, chopped
  • a handful cilantro, chopped
  • 1 can of corn

Cook 1 cup of quinoa with 1 and a half cups of water. Let cooked quinoa cool out completely. In a large bowl, combine cooked quinoa, chopped onion, diced avocados and strawberry slices. Stir together and toss with corn. Chop cilantro and add to quinoa salad. Drizzle lime juice on top, season with salt and pepper. Spoon salad into empty avocado skins and serve.

    There are world-wide quinoa shortages right now, apparently due to a great increase in popularity. Have you had issues finding it? Here all I can find is red quinoa and almost all supermarkets have notices up about the shortages! Crazy!

    1. Thank you! 🙂 Wow I haven´t heard about that! Actually I didn´t have any problems finding it here. Maybe because it isn´t very common here anyways… That´s really crazy! xx
