One of my favorite to go recipes when I´m busy and don´t have a lot of time to cook? But still want to have a filling and healthy meal? These baked sweet potatoes topped with sour cream, arugula and pecans are full of flavor. Another simple ingredients recipe prepared in less than an hour!
This is what you will need preparing for 2:
- 2 medium-large sized sweet potatoes
- 1 cup of sour cream
- 2 hands full of arugula
- fleur de sel
- olive oil
Half the sweet potatoes and drizzle with olive oil and a little fleur de sel. Bake the sweet potatoes in the oven at 200°C for about 15-20 minutes until they are soft. Meanwhile prepare the dressing.
For the dressing you will need…
- 100 ml olive oil
- lemon juice form half a lemon
- salt & pepper
- 1 tbsp. honey
For the dressing combine the olive oil, lemon juice and honey. Season with salt and pepper. When the sweet potatoes are baked remove them from the oven. Toss the dressing with the arugula. Place 3 tbs. of sour cream on each potato half and top with the marinated arugula and pecans.
Dig in and enjoy!
