Orange spice madleines


I  have actually never made madleines before until this christmas. That was the time where I got a special madleine mold from my aunt Emily. I only know madleines from Paris, where I once had them, but I have to admit that you can´t  really compare bought ones, even at a bakery with homemade fresh ones. When madleines bake and come out of the oven especially these orange spice madleines your whole house will smell wonderfully fresh and delicious! madleines in my opinion are best right after coming out of the, still hot with a cup of milk!… HmmmmH Up to then I could never make madleines, cause you need to have the right mold, but honestly it´s definitely worth purchasing… or madleines are definitely worth it!


This is what you will need:

  • 100g sugar
  • 90g butter
  • 100g flour
  • 1 egg
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 80ml milk
  • zest of one orange
  • 1/2 tsp. cloves
  • 1/2 tsp. cinnamon

In a large bowl combine butter and sugar.  Beat until smooth. Beat in egg, orange peel also stir in milk. In another bowl, mix flour with baking powder, cinnamon, cloves, and salt. Stir into butter mixture until well blended. Spoon batter into buttered and floured  madeleine molds. Bake in oven (temperature 180°C) until tops of madeleines are lightly browned, 12 to 15 minutes. Invert the pan over a rack to release madeleines. Serve warm, or cool completely.
