Here is another lovely christmas cookie recipe which you can actually also bake during the year. Coconut dices! They kind of remind me of Australian lamingtons when making. These coconut dices don´t really taste like lamingtons, but have a delicious taste of coffee, coconut and rum. These coconut dices are simply delicious and if you like grated coconut as much as I do, I´m sure you´ll love them as well! (: This recipe is a recipe of a friend of my family and since I have made them for the first time last christmas everybody loves them and asked me to make them again.
This is what you will need:
- 20g lard
- 2 eggs
- 140g sugar
- 2 tbs. honey
- 1 tbs. cinnamon
- 1/8 l coffee
- 280 g flour
- 1/2 tbs. baking powder
Mix together lard and eggs, add sugar, honey, cinnamon and coffee. Fold in flour, baking powder and elapse on a baking tray. Bake for around 20 minutes (oven temperature 170° C). Let them cool out and cut baked dough into dices.
cocoa glaze
- 1/4 kg ceres fat
- 4 tbs. cocoa
- 7 tbs. milk
- 2 tbs. rum
- 250 g sugar
- 200g grated coconut
Melt ceres over medium heat. Mix together cocoa, milk, rum and sugar and fold in melted ceres. Heat it again until very fluent. Dip your dices in the hot cocoa mixture and roll in grated cocoa. Set on a parchment paper covered tray and let them rest for an hour at a coolplace and store them in a cookie box.
