These rum truffles are one of my favorite truffles during christmas time. They are made so easily and in no time. If there are kids around you can also make these truffles, call them coconut truffles, and leave out the rum. I think a dash of rum gives many cakes or truffles a very fine taste and since I got a little sister, I made half of my truffles with and the rest without of rum. I will be posting some more truffle recipes next week. As every year I craft little origami boxes where I can fit four different types of homemade truffles. Of course I have to come of with other truffles every year but everyone appreciates and loves this gift very much. If you don´t feel like crafting origami boxes you can also use see through bags and wrap a ribbon around which looks adorable as well. Have a great week. (:
This is what you will need:
- 190g powdered sugar
- 125g butter
- 35g flour
- 65g grated coconut
- 1 1/2 tbs. rum
- 1 tbs. vanilla sugar
- grated coconut, cocoa powder to roll in
Combine butter, vanilla sugar and powdered sugar in a bowl and mix until creamy. Add flour, grated coconut, rum and mix until well incorporated. Form small round truffles. Roll in grated coconut or cocoa powder and place in paper truffle cups. Keep stored at a relatively cool place.
