Apple, cinnamon&chocolate muffins

Ask us about our favorite muffins and we will probably tell you about these delicious apple, cinnamon and chocolate muffins.  Noemi and I haven´t baked together for a very long time, well basically it has been two months, which seemed very long for us.  So we decided to have a wonderful baking afternoon with coffee, tea, a good talk and great treats. As these muffin´s name already says it consists of a nice combination of apple and cinnamon which gives you a very warming feeling and then there´s still the melted chocolate and the dough´s moistness which definitely makes these our favorite. Perfect for afternoon tea, any event or just to use up some apples you still have stored.DSC_0875

This is what you will need (for one tray or 12 muffins):

  • 250g flour
  • 60g butter
  • 250 ml milk
  • 130g sugar
  • 2 tbs. baking powder
  • 1 egg
  • 2 apples, peeled, diced into small pieces
  • cinnamon
  • 1 tsp. vanilla sugar
  • 150 g chocolate cut into pieces

Mix butter, sugar, cinnamon and vanilla sugar until fluffy. Add egg & milk and mix until well combined. Now fold in flour with a whisk. Stir in apples and chocolate. Fill dough into muffin cups  using a sppon or as we did using a cokie scoop (which makes your muffins all the same size) and bake in oven for 20-25minutes (oven temperature 160°C).

  1. ok, I gotta try your recipe, those look well.. perfect is the word? I’ve been trying to crack the code to muffin making, I’m trying to see if there is any useful rule of thumb or ratio of ingredients, but every recipe destroys my theory, and the last 2 times I’ve baked them at home… ask my trashcan how they tasted. Your muffins could be the answer 🙂
