avocado, mango and grilled chicken wraps


The other day I made these super delicious wraps filled with creamy avocado, fruity mango, greens and cheese!!! I love love love the combination of mango and avocado with a squeeze of lemon or lime juice on top! This combination is one of my new favorites this summer!!!  If you are a vegetarian, you can simply skip the chicken. Or if you don´t prefer chicken, you can also add shrimp, which is an amazingly tasty combination with the mango. And the best thing of all it´s super easy to make, perfect as an after work dinner, prepared in only 15 minutes!


This is what you will need (amount as needed)

  • tortilla wraps
  • mascarpone cheese
  • goat cheese
  • avocado
  • mango
  • juice from a lemon or a lime
  • basil
  • arugula
  • organic chicken breast
  • salt, pepper

Prepare all ingredients so you can serve them in little bowls, that way every one can choose their ingredients and make their own wrap. Peal mango and cut into sticks, do the same with the avocado. Wash the basil and arugula and drain them. Cut chicken breast into slices and season with salt, pepper or/and a chicken spice. Heat olive oil in a medium skillet and fry the chicken until well done. Pre-heat oven to 180°C and warm up the wraps for about 10 minutes. Spread 1 tbs. of mascarpone on each wrap, lay avocado ,mango, basil, arugula and sprinkle the goat cheese on top. Season with salt, pepper and lemon juice. Last but not least roll up the wrap and half it in the middle.
