What can be better for a summer lunch or light dinner than this watermelon feta and mint salad?! I simply love having light dinners like this when it´s almost 40°C outside. When you can barely think about eating food cause your appetite is very little, and the only thing you do is eating ice cream and trying to drink liters of water, as I prefer lemon water since I think it´s very refreshing! Anyways you still got to eat something and this recipe is super easy and made quickly with only few ingredients! For some it might be an interesting combination to mix fruit and cheese, but it definitely works and tastes amazing! This recipe also works perfectly as an appetizer or a barbecue salad!
This is what you will need:
- salt, pepper, olive oil
Cut watermelon and feta into mouth sized cubes. Slice up mint leaves and combine all ingredients on a plate or a bowl. Season with salt and pepper and drizzle olive oil on top.

this is such a fantastic combination. my current go-to-summer-dish. you should try it with goat cheese, basil and pine nuts, too.
