strawberry lemon mascarpone tarte

What could be better than a bite of a refreshing combination of strawberry, lemon and cream? Hmmm I´m not sure but to come straight to the point this tarte really tastes amazing and now counts to my absolute favorite recipes! Perfect for summer, made in only an hour and definitely impresses if you bring it as a gift or serve it for friends and family. 🙂 enjoy!!!

This is what you will need:

for the pie crust

  • 230g flour
  • a pinch of salt
  • 2 tsp. sugar
  • 150g butter
  • 3-4 tbs. cold water

Combine flour, salt, sugar and butter in an kitchen mixer or use your hands. Knead butter into flour mixture until no butter lumps remain. Add cold water and knead/mix until dough is smooth. Roll out dough and lay into your pie pan. Bake in oven for about 15-30 minutes until crust resembles golden brown. Meanwhile wash strawberries and lay them on a kitchen towel to dry. Slice strawberries and set aside. Let the crust cool out completely, otherwise the filling will melt on top…

for the filling

  • 500g mascarpone
  • zest of 1 lemon
  • 500g strawberries
  • 150g powdered sugar
  • 125ml heavy cream

Whisk heavy cream until whipped. Combine mascarpone, sugar and grated lemon in a bowl and gently fold in whipped cream until it is well incorporated. Elapse mascarpone filling on top of the baked pie crust. Sprinkle or place in order the strawberries on top of the lemon filling. Keep pie cool until serving!
