Lately I´ve been totally upsessed with making dishes containing grains. Whether I use quinoa, couscous or rice, these grains can be combined with so many ingredients. Just take a look in your pantry, canned corn, raisins, nuts or any fresh ingredients like grilled vegetables or fresh fruit go perfectly with grains. Dishes like these are not only really healthy but also very delicious, refreshing and perfect for summer! honestly my favorite food right now!! What´s your favorite grain recipe? This is what you will need (for about 3 servings)
- 1 cup cherry tomatoes
- 1 cup couscous
- a handful of mint leaves
- a handful of raisins or cranberries
- 50g feta cheese
- olive oil
- salt and pepper
Cook couscous as given on the package direction. Wash Cherry tomatoes and toss in olive oil in a heat prove oven dish. Grill in oven for about 15 minutes. Combine couscous, raisins, grilled tomatoes and chopped mint leaves. Sprinkle feta on top. Add pepper and salt to taste and drizzle with olive oil.
