Carrot and orange bundtcake


Spring is coming and I absolutely love it! For me spring means taking home fresh flowers, finally being able to wear a pair of my flats (I do have too many flats..) and going outside to enjoy the fresh air and sun. Today it wasn´t very nice outside, it rained all day long and I decided to bake this juicy and

delicious carrot&orange bundt cake. I generally like carrot cake very much, because carrots make any cake very moist, the orange zest and juice makes this cake taste very fruity and refreshing. Last but not least bundt cakes are one of my favorite cakes (except of mini tarts), bundt cakes look so beautiful and appetizing and they are perfect for any coffee date!



This is all you need:

  • zest and juice from 1/2 orange
  • 200g carrots, grated
  • 100gg butter
  • 3 eggs
  • 150g sugar
  • 150g flour
  • 80g grated almonds
  • 2 tsp. baking powder
  • a pinch of salt
  • powdered sugar for dusting

Pre-heat oven to 160°C. Mix butter and sugar until creamy. Additionally add eggs, orange juice and stir until well combined. Also combine flour, grated almonds, orange zest, salt, grated carrots and baking powder in a bowl. Add dry ingredients (flour mixture) to wet ingredients (butter mixture) spoon wise and mix until well incorporated. Butter and flour a bundt cake pan and fill dough into cake pan. Bake in oven for about 35 minutes. Let cool out for about 15 minutes, then flip bundt cake on a serving plate. Let cool out completely. Dust with powdered sugar, shortly before serving!
