Spinach dumplings


Have you ever made dumplings? No? These delicious spinach dumplings are traditional Austrian dumplings consisting of spinach and additionally bacon added. When I was as kid everybody used to say you must eat more dumplings, cause I had a very good metabolism and looked like I didn´t get enough to eat… haha Well anyways I´ve been growing up with disliking dumplings in general but now I love them a lot. They are a perfect winter meal, strengthening and yummy! My mother and grandmother make spinach dumplings a lot an then freeze them, so you can quickly have a fresh meal, if you don´t have enough time to cook. You just let the frozen dumplings cook over simmering water for a couple of minutes… as easy as it is. But in this post I will tell you how to make them. IMG_2787

What you will need…

  • 500g fresh or 200g frozen spinach
  • 250g fresh rolls, cut into small dices
  • 1/8l milk
  • 2-3 eggs
  • a pinch of salt and pepper
  • a pinch of grated nutmeg
  • 2-3 garlic cloves
  • 2-3 Tbs. parmesan cheese
  • 50g butter
  • 1 small onion
  • 2-3 Tbs. flour
  • (100g bacon, diced)

Chop onion and garlic. Heat olive oil in a pan, add garlic and onion and sauté until translucent. Additionally add bacon and let sauté for 2 more minutes. Remove from stove. Whisk eggs in a s mall bowl, add milk, salt, pepper and nutmeg, and grated parmesan cheese and pour over cubed bread. Now you can add the onion-bacon-garlic mixture and the spinach. Use your hands to knead and combine until thoroughly mixed. et rest for about 15 minutes until bread cubes have soaked up. Form into small dumplings. You can either boil dumplings in water or let them steam over simmering water for 20 minutes. Melt butter and pour on top of served dumpling, sprinkle grated parmesan cheese on top and serve…
