Every year I come home for christmas to celebrate with my family and I am always excited about our christmas dinner. We always cook stuffed turkey with honey glazed chestnuts and red cabbage, as always I am in charge of making dessert. So I thought about what my grandmother might love mostand I went for chocolate mousse. We were about 15 people so I had to use 15 egg yolks to make my chocolate mousse which means 15 egg whites remaining. So two day later i had to think about to make to use up all those egg whites… making pavlova is always a good solution to get rid of the left over egg whites. Pavlova is a soft cake consisting of only egg whites, sugar and in my recipe chocolate. When your pavlova is spreaded on a baking tray and baked, it has to cool out first. Then you can top it with freshly whipped cream and berries!
Ingredients:
- 4 large egg whites
- 1/4 cup of sugar
- a pinch of salt
- 2 tbs. cocoa powder
- 50g dark chocolate, chopped
- 1 cup of heavy cream
- fresh berries
Mix egg whites until stiff. Add salt and sugar and mix until egg whites form peeks. Now fold in cocoa powder and chocolate. Elapse mass on a parchment paper covered tray and bake in oven for about 20 minutes. Let cool out. Mix heavy cream until whipped and spread on top of baked pavlova. Drizzle with berries, you can additionally grate chocolate on top. It looks adorable!
