Grilled ricotta paninis with tomato soup

When it comes to busy pre christmas weeks -studying a lot and having a lot to do for christmas, I love cozy weekends and especially homemade comfort food. Just like these delicious grilled ricotta paninis served with some freshly made tomato soup- giving you an absolutely warming feeling… mmmh!! Right now Noemi and I have been a little busy and didn´t get to post that much, but in December there will be lots and lots of christmas cookie and warming dishes recipes coming up. I´m very excited about christmas time, for me it´s always a very busy but happy time which I love to enjoy with friends and family. The pre christmas time is all about baking cookies together, going to christmas markets and having some punch wearing warm sweaters, bonnets and down jackets. We wish you all a wonderful November!

You will need:

Tomato soup

  • 1 onion
  • 300g tomatoes
  • 1 tbs. olive oil
  • 200 ml vegetable broth
  • 3 tbs. of heavy cream
  • basil leaves
  • salt&pepper

Chop onions and tomatoes into dices. Heat olive oil in a large skillet. Add chopped onion and let glaze for a minute. Then add tomatoes and deglaze with vegetable broth. Cover skillet with lid and let simmer for 5-10 minutes. Then puree using a hand blender or blend in food processor. Add heavy cream, salt, pepper and basil leaves to taste and serve.

Paninis

  • 1 cup of ricotta
  • 1 tsp. chopped herbs: oregano, chives
  • slices of ciabatta or country bread
  • salt and pepper

Heat grill to medium. Combine ricotta, herbs, salt and pepper in a small bowl. Spread ricotta mixture on sliced bread. Once grill is hot lay paninis on grill and press for a couple of minutes until toasted.

 

Serve warm with tomato soup…
