Chocolate soufflés


Last evening we had a wonderful family get together. We mad some traditional austrian “wiener schnitzel” which everybody loved with a delicious salad and french fries as a side dish. For dessert I made these wonderful soufflés cause there are  many chocolate lovers in my family.

Since “wiener schnitzel” isn´t a light meal I decided to make these soufflés  which seem like a  chocolate cloud in your mouth- light and fluffy. That´s pretty much all I can say about these delicious chocolate soufflés- prove it yourself. This time I didm´t have enough soufflé molds for everyone so I used some usual coffee mugs. I had my fingers crossed that they would´t break and it worked out perfectly- they even looked more adorable than usual.



  • 230g chocolate
  • 40g powdered sugar
  • 1 tbs. vanilla sugar
  • 4 eggs, seperated
  • 1 tsp. baking powder

Pre-heat oven to 175°C. Combine chocolate and 50ml of water in a heat proof bowl and melt over simmering water. Set aside to cool out. Mix egg whites and baking powder until stiff. Mix in powdered sugar until egg whites form peaks. Fold egg yolks into cooled chocolate mixture and stir until well combined. Also sold in stiff egg whites until well incorporated. Spoon batter into buttered soufflé molds and bake in oven for about 20 minutes.
