Yesterday Noemi and I got to finish our cute halloween cookies for you, which we will post next week. We will post halloween spekulatius cookies and cupcakes. In Austria we unfortunately don´t really celebrate halloween, still we decided to at least bake halloween themed goodies which turned out real fun and perfect for halloween partys. Anyways, besides the cookies, we also got to make some heavenly chocolate tartes, a small treat and also a little gift for my aunt´s and grandmother´s upcoming birthday. These tartes are perfect, espescially for chocolate ganache lovers. Chocolate ganache filled tartes topped with cocoa powder and grated chocolate….mmmh Something I have wanted to make since ages and finally got to bake now.
- 150g flour
- a pinch of salt
- 3 tbs. sugar
- 1 egg
- 1 tbs. vanilla sugar
- 120g butter, room temperature
Combine flour, salt, sugar and vanilla sugar in a bowl. Add butter and knead until there no lumps remain. Add egg and knead with hands until dough is smooth and al ingredients are well incorporated. Cover with tin foil and let rest in fridge for 30-60 minutes.
Meanwhile make filling and prepare tarte molds: Grease 4-5 tarte molds.
- 150g chocolate
- 50g butter
- 100g heavy cream
- 1 egg
- 30g sugar
Combine chocolate, butter and heavy cream in a heatproof bowl and melt over simmering water. Stir occasionally until butter and chocolate has melted. Set aside. Mix egg and sugar in a bowl until creamy, fold in melted chocolate mixture and mix until well incorporated.
Roll out pie crust dough on a floured surface and cut out circles sized for your molds. Fit in molds, prick them using a fork and pre bake for 5-10 minutes until light brown. Fill tartes with chocolate ganache and bake for another 10-20 minutes until an insert toothpick comes out clean.
Remove tartes from oven, let them cool out and dust with cocoa powder. You can also sprinkle them with some grated chocolate. Serve and of course enjoy!
