Upside down plum cake

DSC_0491Yesterday my mother came with a huge box of prune plums. I was really happy about her getting these from a friend´s orchard since we couldn´t harvest any ourselves. And immediately my thoughts kept busy what to make out of them. I was inspired to make a totally new version of a prune cake (,well at least I was very excited by making this, since I only now Tarte Tatin).   I made an upside down plum cake which is really easy. You make a little caramel glaze, pour it on the bottom of your cake pan, top it with fruit and layer it with cake batter. Voilà, as easy as it is, throw it in the oven, flip it and serve warm- It´s heaven!


These prune plums weren´t very big but nice and juicy and sweet but not too soft, so they were perfect to cut into halfes.


This is what you will need:

Caramel top:

  • 40g butter
  • 120g sugar
  • 4 tsp. of apricot jam
  • prune plums, pitted and sliced

Melt butter in a small saucepan. Add sugar and jam and let caramelize on medium heat. Remove from stove and evenly pour caramel on the bottom of your cake tin. Let it cool out (it will get a little hard) and then top with sliced plums.

Prepare batter:

  • 190g all purpose flour
  • 1 tsp. baking powder
  • a pinch of salt
  • 150 ml of milk
  • 1 tbs. of vanilla sugar
  • 110g butter
  • 130g sugar
  • 2 eggs

Preheat oven to 180°C. Mix butter, sugar and vanilla sugar creamy. Add eggs and mix until well incorporated. Combine flour, baking powder and salt in another bowl and add to butter mixture in batches. Additionally add the milk and mix everything until smooth. Pour batter over layered plums in cake tin and bake for about 30-45 minutes or until an insert tooth pick comes out clean. Flip your cake right away (otherwise the caramel will get sticky and you won´t be able to flip your cake anymore). First remove cake ring, lay platter or plate (for serving) on top of the baked batter and flip. Remove bottom of the cake tin and you´re all set. You can serve this with a little whipped cream or plain.
