Orzo salad with tomatoes&garbanzo beans

This is one of my all time favorite summer pasta salads which I could have any time of the year though. It´s inspired by Giada de Laurentiis` recipe. The thing I love most about this salad is the crunchiness from the garbanzo beans and chopped onions but still this salad tastes really refreshing because of its lemon dressing. In Austria it´s really hard to find orzo and for everyone who doesn´t know it yet it´s rice shaped pasta. Well anyways I always bring back a couple packages of orzo when I go to the States and really enjoy making and having this dish afterwards…DSC_0471

What you will need is:

  • 1& 1/2 cup orzo
  • 3 cups of chicken broth
  • 1 can of garbanzo beans
  • 2 hands-full of cherry tomatoes
  • 1 red onion
  • basil leaves
  • salt& pepper
  • juice from 1 lemon
  • olive oil
  • 1 tsp. honey

Bring chicken broth to a boil. Add orzo and cook until done. Drain orzo and set aside. Chop up onion, basil and cherry tomatoes. Combine all chopped ingredients with garbanzo beans and orzo in a serving bowl. Now prepare dressing: Squeeze lemon juice from one lemon in a small bowl, combine with about 2-3 tbs. of olive oil. Add salt, pepper & 1 tsp. of honey to taste. Pour dressing on top of your salad and toss.

In my opinion this salad just tastes best after sitting for a while. The lemon and honey dressing soaks in the orzo and makes it absolutely refreshing!
