My absolutely favorite pumpkin pie

When I come to America I always have to make pumpkin pie. It´s my all time favorite pie recipe and since I don´t get to make it very often it´s even more special for me. In America and Canada they eat pumpkin pie around fall and christmas time and also as a dessert at Thanksgiving. Well I could probably eat it all around the year. The traditional method of making the pumpkin filling is using a pumpkin called pie pumpkin. You half & peel it and remove the seeds. Then you heat it until it´s soft and puree it in a blender. An easier way is to use canned pumpkin which I did yesterday, because pumpkins aren´t seasonal right now…

Ingredients:

Pie crust:

  • 250g flour
  • 100g icing sugar
  • 115g butter, cut into small pieces
  • 1 egg
  • 1 tbs. vanilla sugar
  • lemon zest
  • pinch of salt

Put flour, salt, sugar, lemon zest, vanilla sugar and butter on your working surface. Start kneading. Use your fingertips to rub the butter into the flour until no butter lumps remain. Add egg and keep kneading until dough is smooth. Roll out dough on floured surface to fit into your pie mold. Prick your pie crust using a fork. Pre-bake pie in oven for 15-10 minutes (oven temperature 180°C).

Filling:

  • 1 can of pureed pumpkin
  • 1 cup of condensed milk
  • 2 large eggs
  • 1&1/2 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. of ground ginger
  • 1/4 tsp. of ground nutmeg
  • 1/2 tsp. of allspice

In a large bowl whisk together pumpkin, condensed milk, eggs and all spices. Stir until well blended. Then pour pumpkin mixture into pie shell and bake in oven for about 45 minutes or until an insert toothpick comes out clean. Let cool out and serve. In my opinion it even tastes best after sitting in the fridge over night.

  1. Beautiful pie! I made one last month out of the blue because I had so much frozen pureed pumpkin left over from last fall. Probably one of my favorite treats too. The air is beginning to feel like fall, so another pumpkin pie soon is definitely in order!

  2. Your pie is lovely. We love pumpkin pie in this house so much it ends up being a birthday “cake” for two birthdays every year! One is in October so it is the season for pumpkins…the other in March…I think using can pumpkin works very well.
