Making filled italian piadinas

IMG_1322Piadinas are one of my favorite dishes. They kinda look like tortillas but are italian flatbreads made with white flour. There are so many ways to fill these piadinas and after being grilled in a panini toaster they taste absolutely amazing. Piadinas can be made from scratch, so if you´d like me to post the recipe of home made piadina bread let me know in the comments. Otherwise you will  probably find piadinas at the grocery store right next to the tortilla bread section. I honestly had to look for them for a long time. In Vienna I could find them on “Naschmarkt” which I was really excited about…

This is what you will need:

  • piadina bread
  • arugula
  • prosciutto ham, sliced
  • brie cheese, cut into slices
  • ricotta cheese
  • tomatoes, sliced

Spread each piadina with 2 tbs. of ricotta. Top with 1-2 hand of arugula and sliced tomatoes. Arrange sliced brie cheese and prosciutto on top. Fold piadina in half and grill in piadina oven or normal oven for 5-10 minutes. Cut each piadina into 4 slices and serve.
