Having a barbecue

unbenannt-1 KopieMmmmh… when it comes to summer I am always excited about having barbecues. Whether you invite family or friends or have it with your close family it´s always relaxing.   You don´t have to be stressed  that your courses won´t be ready or done in time. I always make lots of antipastos and snacks and of course nice drinks which are perfect as an appetizer and while waiting for the grilled food. Here I got three recipes for you: an easy antipasti recipe, side dish and a dessert.

Sun dried tomato pesto:

  • 100g sun dried tomatoes
  • 40g pine nuts
  • 2 garlic cloves
  • 40g freshly grated parmesan cheese
  • 150ml olive oil

Finely chop sun dried tomatoes. Combine pine nuts, chopped tomatoes, peeled garlic cloves and parmesan cheese in a food processor. Grind short and then add olive oil. Mix until pesto is homogeneously.

Serve as a bread spread or to dip with crissini sticks.

Making vegetable spits:

  • button mushrooms/ champignions
  • red, yellow and orange peppers
  • zucchini

Cut into nice big but mouth-sized pieces. Alternately spear vegetables on spits and grill on barbecue or in oven for about 15 minutes.

Fruit salad:

  • blueberries
  • peaches
  • galia melon

Cut peaches and melon into bite-sized pieces, combine in a bowl and drizzle blueberries on top. Put in fridge and serve when needed.
