As I had announced in a previous post, I’ll present you another recipe from the amazing blog ‘A Vegan Kitchen’.It’s chocolate biscotti. It was the first time I’ve tried them and I must say it’s easier than I thought! I always imagined that making biscotti would be very complicated and that it would take a long time but in fact it is pretty easy and quick. (: The biscotti are very crunchy, which is a thing I love and I hope you guys do as well! (: Best with coffee, tea or milk…mmh
Ingredients:
1 cup flour
1/4 cup cocoa powder
3/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp vanilla extract
1/4 cup sugar
1/4 cup almonds
1/4 cup oil
4-5 tblsp water
Directions:
Sift flour, cocoa powder, baking powder and baking soda
Pulse almonds in food processor and add to flour
In a bowl add water, vanilla, sugar and oil – mix until sugar has dissolved and add to the flour mix
Knead into dough
Place on baking sheet in a log shape
Flatten log to 1inch thickness
Bake on 160C for 25 minutes
Take out of oven, turn oven down to 130, and slice (diagonally for long biscotti and across for shorter)
Lay biscotti pieces face up and bake for 8 minutes to dry out
