Mini coconut & white chocolate tartes

Well guys, here I present you my first self developped vegan baking recipe! I know it’s a very easy one but I’m really excited and I hope that it will work out for all those of you who try. I wanted to use coconut cream for the filling but didn’t get it so I used the top of a freshly opened can of coconut milk. If this is not enough, pour all the coconut milk in a bowl and put it in the fridge for a couple of hours and it will become a cream. (: I’m open for any advice and help to make the recipe become better! I recommend to serve it with fresh berries or cherries are also very good. (:

Ingredients:

Filling:

80g coconut cream

50g vegan white chocolate (I used rice chocolate)

Crust:

2 tablespoons vegan margarine

20g sugar

60g whole spelt flour

Preparation:

Preheat the oven to 150°C.

First prepare the filling. Put the coconut cream into a bowl. Melt the chocolate in a bowl set over simmering water. Let it cool. Pour over the coocnut cream. Stir until there a no chunks left and very creamy and smooth. Place in the fridge.

For the crust, cream the margarine (margarine is always very soft so you won’t need to let it chill on room temperature. Add the sugar, then the flour. Press in the tarte pans and bake until lightly browned. Remove from the oven and let them cool until completely cold. 

Remove the filling from the fridge and fill the crusts with it. Serve right away or keep refrigerated until serving.

    1. I didn’t have one either but the top of a can of coconut milk has always a creamy substitute. If you place the coconut milk in the fridge for a couple of hours it will become kind of a cream. It may work with coconut milk as well if you just place it in the fridge for a little longer! (:
