Vegan strawberry crumble

Yesterday I found some absolutely delicious and irresistable looking strawberries.  I love using strawberries for baking and since my very good friend Magdalena is vegan, we had to think about a good and easy made summerly recipe with strawberries. We came up with making strawberry crumbles which tasted amazing – crunchy crumbles on top but juicy on the inside. Served with greek, soy or plain yoghurt this tastes even more delicious!

This is what you will need:

Filling

  • 250g strawberries
  • 40g flour
  • 100g raw cane sugar
  • 50g margarine
  • 160g oats
  • 1 tbs. vanilla sugar

Preheat oven to 180°C. Prepare filling: Cut strawberries and combine with sugar and vanilla sugar in a bowl. Set aside, so they will turn moist. Meanwhile combine flour, oats and margarine in another bowl and crumble up butter. Add strawberries to flour mixture and fill 1-2tbs. into each muffin mold.

Crumbles

  • 130g flour
  • 80g raw cone sugar
  • 70g margarine
  • 2 tbs. cinnamon
  • (greek/ soy yoghurt for serving)

Prepare crumbles: Combine flour, raw cone sugar, margarine, cinnamon in a bowl and make crumbles using a fork. Sprinkle crumbles on top of your strawberry flour mixture and bake in oven for about 30 minutes!

Serve with greek, soy or plain yoghurt and fruit and enjoy!
