Homemade apricot jam

Unbenannt-1Finally- here´s my post from our apricot order from Burgenland. I think I have already told you that we have two apricot trees which unfortunately aren´t bearing a lot of apricots this year. We wouldn´t have enough apricots to cook jam and that´s why we ordered 150 kg, which really is a lot! We gave some of them to family and friends, so everyone could enjoy them too. The nicest ones were kept for drying and of course for eating and baking! Some were frozen to make apricot dumplings and the rest was cooked to jam.

This is what you will need:

  • 5oog of jam sugar/ preserving sugar
  • 1 kg of apricots, pitted
  • 5-10 medium sized jars

Wash apricots and remove the pits.  Combine fruit with jam sugar in a large pot and let cook while you should constantly stir. (Be careful not the burn the bottom!- That´one reason why should stir your jam.) Let cook for at least 10 minutes (keep stiring).

Then pour your jam into glasses and fill them up to the rim. Close them and place them next to each other where they can cool out over night. Cover with a kitchen towel and the next morning you can already enjoy it for breakfast!

  1. Those pictures are breathtaking! I would love to learn how to make my very own jam. Your apricot jam is enticing enough to make me want to run out and get some apricots.
