Harvesting cherries

Unbenannt-1It´s the time of the year! It´s time for harvesting cherries here in Styria in Austria. We have two big cherry trees in our orchard and when it comes to harvesting, the whole family has to help, also friends come over and help picking baskets full of juicy cherries. Now here´s the point where I have to get inventive. we already made some cherry jam and since my uncle made enough of cherry schnapps last year he won´t make any this year. Anyhow I already made cherry clafoutis, some drinks with cherries and this cherry cake. Do you guys have other ideas and recipes with cherries? I´d be thankful for more new ideas and inspirations!

This is what you will need:

  • 5 eggs, seperated
  • 180g butter
  • 50g powdered sugar
  • 50g normal sugar
  • 180g all purpose flour
  • 1 tbs. vanilla sugar
  • 1 tsp. baking powder
  • 300g cherries or as much as you prefer

Mix egg whites stiff, then add sugar and mix on. Mix together butter, powdered sugar, vanilla sugar and egg yolks in another bowl until batter is creamy. Fold in stiff egg whites using a whisk and also whisk in flour and baking powder. Pour batter into a prepared cake tin (butter and dust it with flour before). Now top with your cherries and bake in oven for about 30 minutes until light brown (oven temperature 180°C). Let your cake cool out, dust with powdered sugar and serve!

Note: You can use this recipe for muffins as well, or bake it in any other molds or tins.
