Cooling and fruity Smoothies and these banana oat meal cookies are a perfect summerly delight. Yesterday I found this cookies recipe on Life of bear, a wonderful blog with lots of delicious recipes and I had to try it right away. Thank you Flo Bear. (:
I did change the recipe of the cookies a bit, because I wasn´t too sure about the texture, so just try it out yourself, it´s very easy…
You will need (for one tray of cookies):
- 1 1/2 banana
- 1 cup of oats
- 1 tsp. of baking soda
- raisins, chocolate chips, dried fruit (as you prefer)
Simply mash the banana in a bowl using a fork. Add oats, baking soda and your preferable ingredient and mix until well combined. Layer a baking tray with parchment paper and drop 1 tbs. of batter on your tray. Form round cookies and bake in oven for about 15 minutes (oven temperature 180°C). Let them cool out and serve.
Strawberry Banana Smoothie
- 1 banana
- 4-6 strawberries
- 2 tbs. oats
- 500 ml orange juice
- 1 tbs. vanilla sugar
Combine all ingredients in a mixer and blend until smooth. Serve and enjoy!

beautiful cookies! can i ask, without flour, what did the baking soda work on in this recipe?
Well that´s a good question (: But I can tell you. Baking powder makes cookies rise and if you want your cookies to be nice and flat baking soda makes them get larger but they won´t rise.
