Spinach Strudel

DSC_0083This week I got to make one of my favorite vegetarian dishes… Noemi´s spinach strudel with feta cheese. It is so delicious, no matter if you eat it freshly baken or have it cold as a snack.
It is so simple to make and is healthy as well…We simply love it!



This is what you will need:

  • 500g spinach
  • 1 roll of ready puff pastry
  • 1 package of feta cheese, cut into dices
  • salt
  • pepper
  • a pinch of grated nutmeg
  • 2 tbs. butter
  • 1 garlic clove, chopped
  • 1/2 cup of water

Melt butter in a pan, add garlic and let brown until golden. Then add spinach and 1/2 a cup of water.  Let spinach cook for about 7 minutes. Season with salt, pepper and nutmeg and set aside. Drain water and spread spinach and cut feta cheese on puff pastry dough. Fold together strudel and bake in oven (temperature 180°C) for about 30 min or  until golden brown.
