Happy Valentine´s cupcakes!

And for everyone who doesn´t have the right present yet or also wants to bake something for their loves, we have made some really delicious: Black forest strawberry cupcakes! We wanted to combine fruit and chocolate, and since we thought red and pink colors would be perfect for Valentine´s day we went for strawberries as fruit. We decorated our cupcake´s topping with fondant a special mass, which you can buy in cake supply shops. It´s a formable mass which you can roll and cut out shapes with. This is what you will need:

For dough (makes one tray of (12)cupcakes)

  • 120g butter
  • 120g chocolate
  • 90g powdered sugar
  • 90g sugar
  • 120g all purpose flour
  • 6 eggs, seperated
  • 1 tbs. of vanilla sugar
  • a pinch of salt
  • strawberry jam

Melt chocolate. Mix egg whites until fluffy, add sugar, vanilla sugar and a pinch of salt and go on mixing until stiff. Preheat oven on 180°C. Mix together butter, powdered sugar and melted chocolate in another bowl. Then add egg yolks and fold in stiff egg whites using a whisk. Also fold in flour until well incorporated. Devide your mixture into muffin cups until they are all filled half way. Then add 1 tsp. of strawberry jam on each of your cupcake mass and fill the cups up to the rim with the rest of your mass. Bake in oven for about 20 minutes.


Then let your cupcakes cool out and meanwhile prepare your topping:

  • 115g butter
  • 250 g powdered sugar
  • 1 tsp. of milk
  • a couple of drops of food coloring (preferable)

Mix together butter and sugar until fluffy, add milk and food coloring and fill into a piping bag. Pipe each cupcake as you prefer and decorate with hearts, pearls, chocolate sprinkles,…
