Coconut cake roulade

DSC_0210Roulade is a sponge cake dough which is baked on a flat tray, brushed with jam afterwards and rolled together. It is pretty easy to make and is made in 20 minutes. Yesterday I baked this roulade for friends. I filled it with my orange marmalade which is a perfect addition to the coconut flavor. 

This is what you will need:

  • 3 eggs
  • 150g sugar
  • 50g all purpose
  • 1/2  tsp. baking powder
  • 30g grated coconut
  • jam or marmalade for filling

Preheat oven to 175°C. Mix together eggs and sugar until creamy. Fold in flour and baking powder using a whisk and also add grated coconut. Spread mass on parchment paper covered tray and bake for 10 minutes until golden brown. Collapse baked roulade, remove baking sheet and spread jam onto roulade and ill it up. Let it set for a half an hour, before serving dust with confectioner´s sugar.
