Really delicious tiramisu

Tiramisu is an Italian dessert which is made out of ladyfingers, dipped into a coffee and rum mixture originally layered in a casserole and topped with a delicious egg and mascarpone mixture. Since it was Jim’s birthday on sunday, we decided to prepare one of his favorite treats- tiramisu and because we made it in a cake tin it turned out to look even more special.  Happy Birthday again!

This is what you will need:

  • 4 egg yolks
  • 2 egg withes
  • 60g icing/confectioner´s sugar
  • 40g sugar
  • 30 ladyfingers (plus about 10 for the decoration)
  • 40ml rum
  • 200ml coffee
  • 500g mascarpone
  • dark cocoa powder for dusting

Mix egg whites and sugar until stiff in one bowl. Afterwards combine egg yolks and confectioner´s sugar and mix until creamy in another bowl. Slowly add the mascarpone until well incorporated. Fold in stiff egg whites using a whisk.

Combine coffee and rum in an even bowl. Dip each lady finger halfway into your coffee and rum mixture, place them up side down (dipped side should be on top so liquid can absorb better and your lady fingers won´t get too moist and won´t fall apart) and layer them on the bottom of your cake tin. Then evenly spread half of your mascarpone cream on top of the lady fingers.

Make another layer of dipped ladyfingers, spread the rest of the cream on top.

Cover tiramisu with tin foil and refrigerate for a couple of hours. You can know take of the cake tin ring, dust the tiramisu with cocoa powder and serve.
