Flourless chocolate and nut cake

IMG_0746I love having family around and a couple of days ago we had a family dinner party where me and my father cooked a heavenly delicious roast saddle of venison with sliced bread dumplings and red cabbage. Everybody loved it and as a perfect dessert I went for a simple chocolate and nut cake which is whisked together very quickly and tastes so good.
Delicious chocolate and nuts cake
  • 150 g ground almonds
  • 150 g finely ground walnuts
  • 300 g dark chocolate, chopped
  • 1 teaspoon cocoa powder, heaped
  • 250 g butter
  • 100 g caster sugar
  • 5 large eggs, separated
  • a pinch of salt

Preheat oven to 190°C. Butter a 20-25 cm cake tin and set aside. Combine almonds, walnuts and chopped chocolate and cocoa powder in a bowl and set aside. Mix egg whites and a pinch of salt until stiff and fluffy. Mix together butter and sugar in another bowl, add egg yolks, nuts and chocolate. Fold in stiff egg whites by using a whisk. Fill your mass in buttered cake tin and bake for half an hour until a inserted toothpick comes out clean. Let your cake cool off and dust with confectioner´s sugar just before serving.
