This is an absolutely delicious cake which is made really quick and without baking. 🙂
White chocolate cream cake
For the cake base:
- 200g amaretti
- 100g butter, melted
For the chocolate cream:
- 350g white chocolate
- 500g mascarpone
- 4 tablespoons milk
How to prepare the cake:
Place the amaretti in a food processor and reduce to fine crumbs. Place the crumbs in a bowl and add the melted butter. Press the mixture into a 24cm cake tin with removable base.
Finely chop the white chocolate and melt it over a bowl with simmering water. Leave it to cool for about 7 minutes. Place the mascarpone and the milk in a bowl and blend until smooth.
Add one tablespoon of the mascarpone mixture to the white chocolate then add all the chocolate to the mascarpone cream and blend well until smooth (don’t care about the chocolate crumbs, they will taste delicious).
Spread the chocolate cream over the amaretti base and smooth the surface. Leave it in the fridge for at least four hours or over the night. As the cream is firm, remove the cake tin and put the cake on a plate.
