Kokosbusserl-Coconut kisses

Coconut kisses are really yummy cookies which are basically made out of egg whites and grated coconut. This recipe is not only a christmas cookie recipe. You can perfectly take this recipe to use up left over egg whites from baking. These coconut kisses are really soft, prepared and baked so quickly!

  • 3 egg whites
  • 200g grated coconut
  • 10g breadcrumbs
  • 1 cl lemon juice or/and cointreau (as I always prefer)
  • You can also add dried or crystallized fruit like dates, figs,…

Beat egg whites and sugar until fluffy. Fold in grated coconut, breadcrumbs, lemon juice (/cointreau/& fruits).

Form little balls with a tea spoon and place on parchment paper. Bake for 15 minutes (oven temperature 170°C) until they are golden brown and store in a cookie box.
