Last sunday the time has come to start baking Christmas cookies. We usually make at least a dozen different kind of cookies. Yesterday we started with Vanillekipferl- typical german-austrian Christmas cookies. They´re made out of shortcrust pastry and after baking they are tossed in vanilla sugar. We actually never bake them during the year which makes them so special- they´re actually our favorite Christmas cookies. We will keep you up to date with our Christmas bakery and we´ll soon make rum truffles, special gingerbread ;), Linzeraugen and many more.
Here`s the recipe:
makes 3-4 trays of cookies, sounds a lot but they disappear very fast! 😉
- 540g cake flour
- 140g grated nuts such as almonds or walnuts
- 100g icing sugar
- 340g butter
- 2 eggs
Home made vanilla sugar or bought 2 packages of vanilla sugar mixed with 200g powdered sugar
Pour flour, grated nuts, sugar and butter on working surface and start kneading butter into flour with your fingertips until there are no lumps left. Add eggs and keep kneading until dough is smooth. Let dough rest for an hour in the refrigerator and then form a twocentimeter thick roll . Cut into small pieces and shape small squirrels.
Bake in oven for around 10 minutes (oven temperature 180°).
Toss them in your vanilla and sugar mixture and once cooled off store them in a cookie box.
